We have always been advised or taken for granted that cooking for Westerners is different from cooking for Vietnamese people. Even Vietnamese people have many different tastes due to regional differences. Northern food is known for its simplicity; foods from the central Vietnam are generous in spices and portion; and Southern foods are more likely to be added with sugar. Different regions have different recipes, cooking methods or ingredients.
Therefore, Vietnamese cuisine cooked abroad is usually altered or reduced in some ingredients to match customers’ flavour or taste, but that will make the food much different than its original taste and flavour.
Cô Chín Saigon is an authentic Vietnamese kitchen, the bring diners the taste of Saigon: neither too salty nor too sweet. We try to provide naturally flavoured, traditional and authentic culinary arts while maintaining the typical flavour of the dish for customers to experience. No matter how differently it is cooked, the secret to a good bowl of Phở always lies in its stock. To achieve the perfect taste, we prepare our soup daily using fresh, good quality ingredients locally sourced whenever possible and we restrict using frozen food. We maintain a limited quantity each day and close our restaurant when all portions are sold out.
